Flambeed Bananas

We call them burned bananas - just ask the girls how I say 'Flambeed' and you will know why.

Called "Platanos flambeados a la catalana" in Spain

Serves: 4

    Ingredients:
     

    3-4 tablespoons butter
    Splash of Lemon Juice
    1 Pear per person (cored and sliced)
    ** or 1 Banana per person (sliced lengthwise)
    1/2 cup white sugar for Pears
    ** or 1/2 cup brown sugar for Bananas

    1/2 cup of Brandy, Rum, or ???

    (darker liquor for the bananas seems better)

    Confectioners’ sugar if you have it

    Instructions:
    In a large fry pan, over medium heat, melt the butter.

    Add the Sugar and Lemon Juice. Using a wooden spoon, stir the sugar until it dissolves. Continue to stir until the sugar just starts to turn a caramel color, about 4 to 6 minutes.

    Add the fruit and a pinch of salt. Continue to saute for 4 minutes. Remove the pan from the heat and carefully add the liquor. Place the pan back over the heat and with a long gas lighter, start the brandy on fire. Shake the pan back and fourth several times until the flame dies out.


    Serves great with Ice Cream
    Garnish with the sugar if you have it.
